Children are classified as stunted if the length/height z-score-for-age is <-2 SD. Stunting can occur due to poor gastrointestinal conditions. Prebiotics and probiotics play an important role in helping to maintain gastrointestinal health. The purpose of this study was to analyze the relationship between the consumption of prebiotic and probiotic food sources and the z-score of height/length for age. This cross-sectional study included 100 children aged 6-59 months in the stunting locus village of Bogor Regency. Height/length data were obtained using a stadiometer and infant to meter. Assessment of food consumption of prebiotic and probiotic sources was conducted through interviews using the Semi Quantitative-Food Frequency Questionnaire form. Bivariate test used Pearson correlation test and multivariate test used multiple linear regression test. The data showed that 48% of children were stunted, and 52% were normal. Bivariate test showed correlations of food consumption of prebiotic sources (r =0.274, p=0.006) and probiotics (r=0.264, p=0.008) with height/length z-score. Multivariate test results showed that consumption of prebiotic sources influenced length/height z-score for age (?=0.007, 95%CI: 0.002-0.011, p=0.003). The low nutritional status that occurs will have an impact on the growth of toddlers, especially on height and weight. Stunting increases the risk of child mortality, has a negative impact on cognitive and motor development, reduces performance at school, increases the risk of excess nutrition and non-communicable diseases, and reduces productivity in adulthood. The aim of the research was to determine the level of preference and nutritional value of hakau dim sum with the addition of fish bone meal to prevent stunting. This research is an experimental research, namely making hakau dim sum skin which is added with catfish bone meal. The design was a completely randomized design (CRD) with 1 control (without using fish bone meal) and 2 treatments, namely P1 (70% fish bone meal : 30% tangmien flour), P2 (50% fish bone meal : 50% tangmien flour). The results of the research based on the Kruskal Walis test for color and taste parameters showed P>0.05, H0 was accepted so there was no real difference in the treatments (P0, P1, P2) on aroma and taste. While the aroma and texture showed P<0.05, H0 was rejected so that there were significant differences in treatment (P0, P1, P2) on the aroma and texture of hakau skin. The nutritional content of hakau skin, analysis of calcium levels in hakau skin with treatment P2 (30% tangmien flour : 70% catfish bone meal) was 18.64%, much higher than the calcium content in treatment P1 (50% tangmien flour : 50 % catfish bone meal), namely 4.58%. Phosphorus levels P2 (19.13%) with P1 (6.73%). P1 carbohydrates are 29.75% and P2 22.22%. The ash content is 13.24% (P1) and 17.50% (P2). Protein is 6.70% (P1) and 8.84% (P2). The results of fat content analysis are 3.45% (P1) and 4.54 (P2). The fat content of hakau skin is 3.45% (P1). ) and 4.54 (P2).</em></p> <p><strong>ABSTRAK</strong></p> <p>Masalah sosial yang sedang dihadapi Indonesia pada saat ini yaitu masih rendahnya status gizi pada masyarakat terutama pada anak balita. Rendahnya status gizi yang terjadi akan berdampak pada pertumbuhan balita terutama pada tinggi badan dan berat badan. Stunting meningkatkan risiko kematian anak, berdampak negatif pada perkembangan kognitif dan motorik, menurunkan performa di sekolah, meningkatkan risiko kelebihan gizi dan penyakit tidak menular, dan mengurangi produktivitas pada saat dewasa. Tujuan penelitian adalah untuk mengetahui tingkat kesukaan dan nilai gizi dimsum hakau dengan penambahan tepung tulang ikan untuk pencegahan stunting. Penelitian ini merupakan penelitian eksperimen yaitu melakukan pembuatan kulit dimsum hakau yang ditambahkan dengan tepung tulang ikan patin. Rancangan adalah rancangan acak lengkap (RAL) dengan 1 kontrol (tanpa menggunakan tepung tulang ikan) dan 2 perlakuan yaitu P1 (tepung tulang ikan 70% : tepung tangmien 30%), P2 (tepung tulang ikan 50% : tepung tangmien 50%). Hasil penelitian berdasarkan uji Kruskal Walis parameter warna dan rasa menunjukkan P>0.05, H0 diterima sehingga tidak ada perbedaan yang nyata perlakuan (P0, P1, P2) terhadap aroma dan rasa. Sedangkan aroma dan tekstur menunjukkan P<0.05, H0 ditolak sehingga ada perbedaan nyata perlakuan (P0, P1, P2) terhadap aroma dan tekstur kulit hakau. Kandungan gizi pada kulit hakau analisis kadar kalsium pada kulit hakau dengan perlakuan P2 (30% tepung tangmien : 70% tepung tulang ikan patin) adalah 18,64%, jauh lebih tinggi dibandingkan dengan kadar kalsium pada perlakuan P1 (50% tepung tangmien : 50% tepung tulang ikan patin), yaitu 4,58%. Kadar fosfor P2 (19,13%) dengan P1 (6,73%). Karbohidrat P1 yaitu 29,75% dan P2 22,22%. Kadar abu adalah 13,24% (P1) dan 17,50% (P2). To improve understanding of child nutritional status, a bibliometric analysis of maternal micronutrient intake during pregnancy and lactation and child nutritional status was conducted. This analysis aimed to identify key trends and potential areas for future research. The bibliometric analysis was conducted using Biblioshiny software supported by "R" package version 4.2.2 environment and vos viewer. Analysis of the development of published articles shows that in recent years there has been a substantial increase in published articles related to the issue of micronutrient intake of pregnant women, lactating mothers, and children's nutritional status. The top four contributing countries are the USA, India, United Kingdom and Indonesia. Johns Hopkins Bloomberg School of Public Health, Hasanudin University, London School of Hygiene and Tropical Medicine, and National Institute of Nutrition were the top universities with the highest number of publications. The most frequently occurring keywords in the stemmed or root version were 'breastfeeding', 'pregnancy', 'nutritional status', and 'micronutrient'.</em> <em>F</em><em>urther research needs to be done that has not been widely researched and published in Scopus such as on micronutrient deficiencies in breastfeeding mothers associated with supplementary foods, food security and safety with the nutritional status of mothers, breastfeeding and nutritional status of infants.</em></p> <p> </p> <p>ABSTRAK</p> <p>Penelitian terkait masalah gizi anak telah banyak dilakukan, termasuk faktor-faktor determinannya. Untuk meningkatkan pemahaman terkait status gizi anak dilakukan analisis bibliometrik tentang asupan mikronutrien ibu saat hamil dan menyusui dengan status gizi anak. Analisis ini bertujuan untuk mengidentifikasi tren kunci, area potensial untuk penelitian selanjutnya. Penelitian ini secara sistematis melakukan pencarian menggunakan database Scopus untuk artikel ilmiah tentang asupan mikronutien ibu hamil, ibu menyusui dan status gizi anak yang dipublikasikan sejak tahun 2003 hingga 2023. Jumlah artikel yang didapatkan untuk dianalisis sebanyak 164 artikel.Analisis bibliometric dilakukan menggunakan software Biblioshiny yang disupport oleh “R” package versi 4.2.2 environment dan vos viewer. Analisis perkembangan artikel terpublikasi menunjukkan bahwa beberapa tahun terakhir terdapat peningkatan substantial dalam artikel yang dipublikasikan terkait masalah asupan mikronutrien ibu hamil, ibu menyusui dan status gizi anak. Amerika, India, Inggris dan Indonesia merupakan empat negara kontributor terbanyak. Jhons Hopkins Bloomberg School of Public Health, Universitas Hasanudin, London School of Hygiene and Tropical Medicine dan National Institute of Nutrition merupakan top universitas dengan jumlah publikasi terbanyak. Kata kunci yang paling sering muncul dalam versi stemmed atau root adalah “breastfeeding”, “Pregnancy”, Nutritional Status”, ‘Micronutrient”.
